Fruit Cake
Twomomma’s substitute ‘birthday cake’ for Baxter
!½ pound dates
1 can of cherries
½ cup of mixed fruit
½ cup of raisins
1 cup of coconut
1 cup of flour
¼ teaspoon of baking soda
1 tsp of spices
Soak in brandy overnight, then add 1 cup of pecans
Cream, ½ cup butter, 2 eggs, and ¾ cup of sugar
Mix well and bake in a loaf pan lined with brown paper at °275 for 2 ½ hours, then °250 for ½ hour. Pour corn syrup (yes, corn syrup) over the cake while it's hot, then glaze with Brandy.
