Twomomma’s substitute ‘birthday cake’ for Baxter

  • !½ pound dates

  • 1 can of cherries

  • ½ cup of mixed fruit

  • ½ cup of raisins

  • 1 cup of coconut

  • 1 cup of flour

  • ¼ teaspoon of baking soda

  • 1 tsp of spices

  • Soak in brandy overnight, then add 1 cup of pecans

  • Cream, ½ cup butter, 2 eggs, and ¾ cup of sugar

Mix well and bake in a loaf pan lined with brown paper at °275 for 2 ½ hours, then °250 for ½ hour. Pour corn syrup (yes, corn syrup) over the cake while it's hot, then glaze with Brandy.
